Louise Cake

Last night I made a Louise Cake for my boyfriend. My oven gets very hot and the top burned a little, also I didn't have any raspberry jam so I used some home-made plum jam that my mum made. Overall, it wasn't marvellous. 



Topping


  • 125 g sugar
  • 50 g coconut
  • Directions:

    1. 1 Cream butter and sugar.
    2. 2 Add yolks then sifted flour and baking powder.
    3. 3 -mix - press into small slice tray or roll out onto greased baking tray.
    4. 4 - Spread with Raspberry Jam.
    5. 5 - Beat egg whites until stiff.
    6. 6 - Fold in sugar and coconut.
    7. 7 - Spread over Jam.
    8. 8 - Bake 30minutes at 180 celcius. (more like 10 minutes at 120 in my hot little oven)
